Potatoes Familiar and Liked by Many People in the World

RRI.CO.ID. Jakarta - Potato is one of the most popular tubers in Indonesia and around the world. Originally, potato came from the highlands of Peru, Chile, and Mexico.
In 1565, the Spanish brought potatoes from Peru to Europe. From there, potatoes spread to many countries, including Indonesia.
The first record in Indonesia shows that potatoes were planted in the Cimahi area in 1794. In Indonesia, potatoes are a favourite ingredient for many dishes.
The pople make French fries, potato chips, spicy balado potatoes, and potato fritters. Because potatoes are so easy to cook, people often get creative with them. One popular creation is Smashed Potatoes.
Smashed Potatoes are boiled potatoes that are gently smashed and then baked. The result is crispy on the outside and soft and melty on the inside. And the best part is, it’s very easy to make.
The ingredients are simple. You only need potatoes of any size, butter, olive oil, rosemary leaves or you can use kaffir lime leaves, salt, and pepper.
First, wash the potatoes until they are clean. Keep the skin on so they hold their shape better when baked. Boil the potatoes in salted water. To check if they are done, poke them with a fork. If they are soft, they are ready. Then drain them.
Next, preheat the oven to 200°C or 390°F. While waiting, place each potato on a baking tray and gently smash it. Don’t smash too hard. Melt the butter and mix it with a little olive oil. Brush the mixture over the smashed potatoes. Sprinkle with rosemary, salt, and pepper.
Bake the potatoes for 20 to 25 minutes. When they turn golden brown and crispy, they are ready to serve. Smashed Potatoes taste best with a creamy cheese sauce.
You can also get creative with the seasoning. Add chili for some heat, or sprinkle parmesan cheese on top. Just adjust the flavours to match your taste at home.
