Ayam merangkat, a signature dish of the Sasak people, has officially received a Communal Intellectual Property (KIK) certificate from the Regional Office of the Ministry of Law of West Nusa Tenggara (NTB) Province.

Communal Intellectual Property (KIK) refers to intellectual property collectively owned by a community, rather than individuals.

KIK encompasses various categories, including traditional cultural expressions, traditional knowledge, genetic resources, geographical indications, and indications of origin.

KIK holds economic value and can serve as a significant asset for regional and national development.

Beyond its delicious taste, ayam merangkat carries a profound story about local customs, togetherness, and identity.

Ayam Merangkat is intrinsically linked to the Mangan Merangkat ceremony tradition within the Lombok community, particularly in Central Lombok Regency, which serves as a welcoming feast held to greet the bride after she has been brought to the groom's family home.

According to Desy Wulandari, the owner of Ayam Merangkat Lombok, as quoted by rri.co.id, ayam merangkat is prepared by grilling it without spices over charcoal or coconut husks, imparting a distinctive smoky aroma.

Once cooked, the chicken is served with a zesty lime leaf sambal that tantalizes the palate.

Desy further explained that this culinary dish originates from the merarik (marriage) tradition, which includes a custom called Selarian, the traditional Sasak wedding ceremony.

In this tradition, a young man escorts his future partner to his family's home as part of the pre-wedding events. Subsequent discussions then take place with family and close relatives regarding the following traditional steps.

In an atmosphere of joyful anticipation, the extended family collaborates to prepare a feast.

Historically, the Sasak people typically reserved chicken dishes for honored guests. The chicken dish served during Mangan Merangkat is known as "ayam merangkat."

Prepared simply without spices and paired with lime leaf sambal, ayam merangkat symbolizes hospitality and a warm welcome, fostering a sense of unity in the spirit of togetherness.

Currently, this culinary heritage is not only thriving within cultural practices but is also a feature of culinary tourism in Bonjeruk and Mataram City. Lombok's ayam merangkat offers a unique flavor while preserving its cultural roots.

Desy acknowledges that promoting ayam merangkat is a challenge, especially since locals and tourists visiting Lombok are already familiar with ayam taliwang.

Nevertheless, she believes that the distinctive flavor and cultural significance of ayam merangkat deserve a place in the preferences of culinary enthusiasts.

Furthermore, this dish has received official recognition through the Communal Intellectual Property (KIK) certificate from the Regional Office of the Ministry of Law of NTB Province.

Desy even aspires to elevate ayam merangkat to the international stage. One way she plans to achieve this is by participating in the welcoming event for 25 ambassadors from various nations, scheduled to take place at Ampenan Beach on Friday, May 9, 2025.

"This is an opportunity to present ayam merangkat to a global audience. Ayam merangkat showcases an authentic flavor rich in culture, with the expectation that it can pave the way for export possibilities or ready-to-eat packaging for markets beyond the region and overseas,” Desy expressed, as reported by rri.co.id.
