Gembili, Indonesia’s Underutilized Local Source of Carbohydrates

RRI.CO.ID, Jakarta – Indonesia is home to a wide variety of local food sources that have the potential to support food diversification. One of them is gembili, a local tuber that is less widely known than cassava and sweet potatoes but has long been consumed in several parts of the country.
Known scientifically as Dioscorea esculenta, gembili is a tuber crop belonging to the Dioscoreaceae family. The plant grows as a vine, while its edible tuber develops underground. The tuber typically has light brown skin and a shape resembles a sweet potato.
Gembili has white flesh with a soft texture when cooked. In some regions, it is traditionally prepared by boiling or steaming. It can also be processed into various traditional dishes and other food products.
Beyond direct consumption, gembili has the potential to be processed into flour, starch, noodles, crackers, cakes, and other alternative food products. This makes the tuber a promising ingredient for developing local pantry products while supporting efforts to reduce dependence on a limited number of staple crops.
Nutritionally, gembili contains carbohydrates as one of its main components, along with dietary fiber, protein, vitamins, and minerals. As part of a diverse and balanced diet, the tuber could serve as an alternative source of nutrients and energy.
Gembili has also attracted attention for its potential as a functional food ingredient due to the presence of compounds such as inulin and water-soluble polysaccharides. However, further scientific research is still needed to better understand its specific health benefits and potential applications.
With its nutritional value and diverse processing potential, gembili represents one of Indonesia’s many underutilized local food resources. Greater public awareness, innovative processing, and wider cultivation could help introduce gembili to a broader audience and strengthen Indonesia’s efforts to diversify its food sources.
