RRI.CO.ID, Jakarta - When people hear the word salad, they may picture fresh vegetables served with a Western-style dressing. Indonesia, however, has a dish with a similar concept: gado-gado. The dish combines various vegetables with tofu, tempeh, eggs, and rice cakes, all topped with peanut sauce. Because of this combination, gado-gado is often referred to as an “Indonesian salad.”
Gado-gado is known as one of Jakarta’s traditional Betawi dishes and is part of the city’s culinary heritage. The Jakarta Provincial Government lists gado-gado among Jakarta’s traditional foods alongside various other Betawi dishes. A serving of gado-gado may include bean sprouts, long beans, spinach, potatoes, and other ingredients depending on how it is prepared.
While salads commonly use dressings as a complement, gado-gado is characterized by its peanut sauce. The sauce brings together savory, sweet, and spicy flavors, creating a distinctive taste that ties the different ingredients together. Indonesia Travel also describes gado-gado as a traditional Indonesian salad combining vegetables with tofu, tempeh, eggs, and rice cakes.
Gado-gado also illustrates the connection between food and cultural identity. The Jakarta Provincial Government recognizes gado-gado as part of traditional culinary knowledge in its regional cultural documentation. The dish has become one of the ways people introduce the richness of Betawi cuisine, which has developed as part of Jakarta’s cultural landscape.
Beyond gado-gado, Indonesia has several other vegetable-based dishes that share a similar concept. ANTARA has mentioned karedok, urap, and trancam as examples of Indonesian vegetable salads. Each dish uses different ingredients and seasonings, but they all reflect Indonesia’s diverse ways of preparing vegetables into flavorful dishes.
Gado-gado is also distinctive because ingredients with different characteristics are brought together on one plate. Vegetables provide a variety of textures and flavors, while tofu, tempeh, eggs, and rice cakes make the dish more substantial. All of these ingredients are then combined with the peanut sauce that gives gado-gado its signature taste.
So, if someone asks what Indonesia’s version of a salad is, gado-gado can be one answer. It follows the concept of combining different ingredients in a single dish, while expressing a distinctly Indonesian character through its peanut sauce, tofu, tempeh, and rice cakes. Gado-gado shows that the idea of a salad can take many forms, including one with a flavor that is unmistakably Indonesian.
