KBRN, Jakarta: Jengkol, a tropical plant native to Southeast Asia, has long been a staple in the cuisines of Indonesia, Thailand, Malaysia, and Myanmar. Known for its distinctive aroma, jengkol is a key ingredient in many traditional dishes, with one of the most famous being Semur Jengkol.
According to Seni Budaya Betawi, the origins of Semur Jengkol trace back to Indonesia’s colonial era, showcasing a unique fusion of European and local influences. The dish, semur, was introduced by the Dutch and originally featured slow-cooked beef in a rich sauce made from tomatoes, onions, and soy sauce.
Over time, Indonesians adapted the dish by replacing beef with locally available ingredients—one of which was jengkol. As noted by the Encyclopedia Jakarta, this innovation allowed the dish to remain affordable and accessible, while still preserving its rich, deep flavors.
The name semur is believed to have evolved from the Dutch word “Stomerijj,” meaning “steamer” or “to steam.” Dutch families in Indonesia likely had local kitchen assistants who misunderstood the word, transforming it into “smoor,” which later became “semur.”
Historical records, including the Groot Nieuw Volledig Oost-Indisch Kookboek from 1902, confirm that semur was developed in the kitchens of Indo-European (Indische) communities in the Dutch East Indies. Today, Semur Jengkol is an iconic dish in Betawi cuisine, often served during special occasions and celebrations.
Despite its strong aroma, jengkol enthusiasts cherish its unique texture and nutty flavor, often compared to chestnuts. When slow-cooked in a savory soy-based semur sauce, jengkol softens and absorbs rich umami flavors, making it a beloved delicacy for those who appreciate bold, distinctive tastes.
In modern-day Indonesia, Semur Jengkol remains a popular dish, found in home kitchens, traditional food stalls, and warungs. Whether you're a longtime fan or a curious first-timer, this dish offers a flavorful glimpse into Indonesia’s rich and evolving culinary heritage.
