RRI.CO.ID, Jakarta - Ganyong (Canna indica) is an underutilized Indonesian rhizomatous crop that has traditionally been consumed as a carbohydrate source. Although less popular than rice or cassava, ganyong contains valuable starch, dietary fiber, and functional carbohydrates that have attracted interest in sustainable food research.

According to research published in the journal Food Hydrocolloids, starch from Canna indica demonstrates unique physicochemical properties that make it suitable for food processing applications. The structure of ganyong starch influences its digestibility, texture, and stability.
