A review published in the journal Food Chemistry reported that taro contains significant amounts of resistant starch and dietary fiber, which contribute to its potential role in digestive health. These components are slowly digested and may support better regulation of carbohydrate absorption.
One of the most interesting characteristics of taro is its potential as a gluten-free food ingredient. Because it does not contain gluten proteins, taro-based products are increasingly explored as alternatives for individuals with gluten sensitivity, celiac disease, or those on a gluten-free diet.
Taro also contains mucilage and fiber compounds that may support gastrointestinal function. These components can contribute to bowel regularity and provide substrates for beneficial gut microorganisms.

Although nutritious, raw taro contains calcium oxalate crystals that can cause irritation when consumed raw or undercooked. Proper cooking and processing are essential to reduce these compounds and ensure food safety.
