RRI.CO.ID, Jakarta - Sweet potatoes (Ipomoea batatas) are one of Indonesia’s important traditional food crops and a valuable source of complex carbohydrates and plant nutrients. Orange-fleshed varieties are particularly recognized for their high beta-carotene content, a precursor to vitamin A that plays an important role in vision and immune function.

According to research published in the journal Food Chemistry, sweet potatoes contain carotenoids, anthocyanins, phenolic compounds, and dietary fiber that contribute to their nutritional and biological properties. Different varieties provide different profiles of beneficial compounds.

One of the most recognized benefits of sweet potatoes is its contribution to eye health. Beta-carotene from orange sweet potatoes can be converted into vitamin A, an essential nutrient required for maintaining normal vision and preventing vitamin A deficiency.

Sweet potatoes also support digestive health because they provide dietary fiber and resistant starch. These components contribute to intestinal function and may support beneficial gut bacteria.

Beyond nutrition, sweet potatoes extract have gained attention in cosmetic and functional food research. Anthocyanin-rich purple sweet potatoes, in particular, are being investigated for their potential use as natural colorants and plant-based bioactive ingredients.

Although sweet potatoes are considered part of a healthy diet, preparation methods influence their nutritional value. Excessive processing or addition of high-calorie ingredients may reduce their overall dietary benefits.
