Sate Klatak: Bantul's Iron-Skewered Goat Satay with Simple Seasoning

RRI.CO.ID, Yogyakarta - Sate Klatak is a distinctive goat satay originating from Bantul Regency, Yogyakarta. Unlike most Indonesian satay, it uses iron skewers instead of traditional bamboo sticks.

The dish developed within the culinary traditions of Jejeran and Wonokromo villages in Bantul. Areas around Pleret and Jalan Imogiri Timur remain known as traditional hubs for Sate Klatak vendors.

In 2019, Sate Klathak Jejeran was recognized as Indonesian Intangible Cultural Heritage. The recognition placed the dish within the country's traditional craftsmanship and culinary skills domain.

The name Sate Klatak is commonly associated with the "klathak-klathak" sound produced by seasoned goat meat while grilling. Several theories explain its name, but the sound-based explanation remains widely cited.

Iron skewers are one of the dish's defining features. They conduct heat into the meat during grilling, allowing vendors to cook relatively large pieces of goat meat evenly over hot coals.

The seasoning is intentionally simple, commonly using garlic, salt, coriander, and pepper. Some vendors rely mainly on salt, allowing the natural flavor of the goat meat to remain prominent.

Unlike many other goat satay varieties, Sate Klatak is commonly served with gulai. The rich curry broth can be enjoyed alongside the satay or with steamed rice.

Several well-known vendors have helped popularize the dish, including Sate Klathak Pak Pong and Pak Bari in Bantul. Sate Klathak Pak Jede also serves the dish in Sleman Regency.

Sate Klatak has since spread beyond Bantul into Yogyakarta city and surrounding areas. Its unusual iron-skewer grilling method and simple seasoning continue to distinguish it from other Indonesian satay varieties.
