Free Meal Kitchens Struggle with Suppliers and Inflation

RRI.CO.ID, Jakarta - Free nutritious meal kitchens must use local small businesses and farmers as food suppliers. This government policy aims to boost the local grassroots economy.

This rule is good for small businesses, but kitchens struggle to meet these standards. Many small suppliers lack the cooling equipment needed to keep fresh food safe.

Fresh meat and fish can quickly spoil without proper cold storage during delivery. Eating this spoiled food can easily cause severe food poisoning among program beneficiaries.

Another problem is budget constraints and dealing with overly complex supply chains. Current rules require each kitchen to use at least fifteen different suppliers, which wastes money.

Buying in bulk from a single modern retailer would in fact be much cheaper. Modern retailers also have better logistics to guarantee food safety and freshness.

Furthermore, kitchen workers need standardized cooking skills to maintain high food quality. This flagship government program must prevent serious issues like food poisoning at all costs.

Finally, rising inflation forces kitchens to find cheaper alternative ingredients to save money. The government must improve standard operating procedures to protect both food quality and the budget.
