Kembang tahu is produced from the thin layer that forms on the surface of heated soy milk during the tofu-making process. This layer is carefully lifted and can be prepared in a variety of dishes, ranging from savory meals to sweet desserts. In some parts of Indonesia, kembang tahu is also known as yuba or tofu skin.
