Andaliman: The Indonesian “Batak Pepper” for Digestion & Culinary Medicine

RRI.CO.ID, Jakarta - Andaliman (Zanthoxylum acanthopodium) is a unique Indonesian spice originating from North Sumatra, widely known as a signature ingredient in Batak cuisine.
Often called “Batak pepper,” this aromatic fruit provides a distinctive tingling sensation due to bioactive compounds such as alkylamides, essential oils, flavonoids, and terpenoids.
A study published in the journal Food Chemistry reported that Zanthoxylum species contain various bioactive compounds responsible for their aroma, taste, and biological activities. Alkylamides found in the fruit contribute to the characteristic numbing and spicy sensation associated with andaliman.
One of the traditional uses of andaliman is supporting digestive comfort. Like other aromatic spices, its essential oils are believed to stimulate appetite and digestive activity, making it an important component of traditional cuisine.
Research has also explored the antimicrobial potential of andaliman extracts. Essential oil compounds from Zanthoxylum species have demonstrated inhibitory effects against certain microorganisms in laboratory studies.
Beyond culinary applications, andaliman is increasingly studied as a source of unique natural compounds. Its distinctive chemical profile provides opportunities for development in food science, flavor technology, and botanical products.
Although commonly consumed as a spice, concentrated extracts of andaliman require further research. Standardization and safety evaluation remain important before therapeutic applications can be established.
