lPB: Sacrificial Meat, Every Process Should be Separated

RRI.CO.ID, Bogor - Meats the people receive during the Eid al-Adha or the Day of Sacrifice might be exposed to contamination. The contamination might happen during the slaughter and distribution process.

Lecturer at IPB University's Animal Science Faculty Dr. Muhamad Baihaqi said the risk increases when slaugther process takes place in open space. "The slaughter and processing are often done at open space without proper sanitary standards, which increases the risk of microbe contamination," he said as quoted by IPB University website, May 26, 2026.

Dr. Baihaqi further said the every process should be separated. This includes the slaughter, the skinning, and packaging.

The lecturer of Animal Production and Technology Department affirmed the packaging is also important during distribution. He recommended to pack the meat and organs separately.

According to him, meat and organs are frequently packed together. This is highly risky because organs can quicken the contamination.

Then, every cut meat should be immediately given to the beneficiaries. After that, they need to separate the meat, organs, and bones before storing them in freezer.

Dr. Baihaqi added that some qurban or animal sacrifice organizations have been developing new ways to process the meat. This includes ready-to-eat products such as canned rendang or jerky, but this might cost more than conventional slaugther and distribution process.
