RRI.CO.ID, Jakarta - Southeast Asia is not only known for its cultural diversity and traditions but also boasts a wide variety of signature dishes that are an integral part of the identity of each country’s people. Nasi goreng, phở, som tam, chili crab, and ambuyat are examples of dishes that highlight the differences in ingredients, preparation methods, and flavors across the ASEAN region.
Based on various culinary sources, these five dishes each possess distinct characteristics that have evolved in accordance with the customs and cultures of their respective countries of origin. This diversity makes cuisine one of the best ways to explore the cultural richness of Southeast Asia through the food consumed in daily life.
Indonesia is home to Nasi goreng, which is widely recognized as one of the country’s signature dishes and is popular in many countries. Thinking Nomads includes nasi goreng on its list of popular Southeast Asian street foods—rice fried with spices and various additional ingredients, such as eggs, and typically enjoyed with crackers on the side.
Vietnam is home to Phở, a soup-based dish that is one of the country’s most well-known foods and comes in various regional variations. Vietnam’s official tourism website explains that phở features rice noodles in a beef or chicken broth simmered with spices, then served with fresh ingredients such as basil leaves, mint, chili peppers, lime, and bean sprouts.
In Thailand, Som Tam is a dish that offers a blend of spicy, sour, sweet, and savory flavors in a single serving. According to Unilever Food Solutions’ discussion on Thai cuisine, som tam is made using grated green papaya mixed with tomatoes, green beans, peanuts, chili peppers, palm sugar, and lime juice to create a fresh and robust flavor.
Meanwhile, Chili Crab is a well-known seafood dish in Singapore’s culinary scene and is often enjoyed as a shared meal. Visit Singapore highlights chili crab as a must-try local dish, featuring crab cooked and served with a signature sauce that imparts a bold flavor to the crab meat.
Unlike other dishes, Ambuyat from Brunei Darussalam is unique for its main ingredient and sticky texture. Chef’s Pencil notes that ambuyat is one of Brunei’s popular foods, made from sago and typically eaten with a chopped sauce and side dishes, while it is enjoyed using a traditional bamboo eating utensil called a candas.
These five dishes demonstrate that ASEAN countries possess a rich culinary heritage with diverse flavors, ingredients, and presentation styles. From rice-based nasi goreng, phở with its spiced broth, the fresh and spicy som tam, chili crab featuring seafood, to sago-based ambuyat, each dish has a story and distinctive characteristics that reflect the culture of the people in its country of origin.
