Getting to Know Gudeg, a Culinary Specialty of Yogyakarta

RRI.CO.ID, Jakarta - Gudeg is one of the culinary specialties closely associated with Yogyakarta. The dish is made primarily from young jackfruit, which is slowly cooked with coconut milk and a blend of spices, giving it a distinctive brown color and mildly sweet flavor.
Gudeg is commonly served with rice, areh, chicken, eggs, tofu, and sambal krecek. The cooking process can take around five hours, allowing the spices to seep into the young jackfruit and giving it a tender texture.
The name gudeg is derived from the Javanese terms hangudeg or ngudheg, meaning “to stir.” The term refers to the cooking process, in which the ingredients are regularly stirred with a ladle to prevent them from burning.
Historical accounts in the book Makanan Tradisional Indonesia Seri 2 by Murdijati Gardjito and other authors suggest that gudeg has been known since the era of the Islamic Mataram Kingdom. The dish is associated with the clearing of Alas Mentaok for the development of the Mataram Kingdom's center, an area that was once abundant with jackfruit and coconut trees.
The abundance of jackfruit and coconuts encouraged local communities to process these ingredients into various dishes, including gudeg. Over time, gudeg became part of everyday life and an important part of Yogyakarta's culinary identity.
Gudeg is generally divided into two types: wet gudeg and dry gudeg. Wet gudeg contains more liquid or areh and is best consumed soon after preparation, while dry gudeg contains less liquid, making it more suitable for storage and a popular choice as a souvenir.
The development of gudeg has also resulted in various forms of presentation and packaging, including gudeg kendil, gudeg kotak, canned gudeg, and gudeg besek. Gudeg kendil and gudeg besek are served in traditional containers, while gudeg kotak is packaged in a box for convenient serving. Canned gudeg, meanwhile, undergoes a sterilization process to extend its shelf life.
With its history and variety of serving styles, gudeg is more than just an everyday dish. It is also part of Yogyakarta's culinary identity, continuing to evolve with changing needs while retaining its traditional character.
