RRI.CO.ID, Jakarta - Aceh is known as one of Indonesia's regions with a rich culinary tradition and extensive use of spices. In addition to coffee, Aceh noodles, and sie kameng, the region is also home to rujak Aceh, a traditional snack combining fresh fruit with a dressing that brings together sweet, sour, spicy, and savory flavors.

One of the distinctive features of rujak Aceh is the use of local fruits such as rumbia and kawista in its dressing. Rumbia, also known as Acehnese wild salak, has pale, cloudy-white flesh and a crisp texture.

Meanwhile, kawista, also known as wood apple, has cream-colored flesh, a distinctive aroma, and a slightly sour flavor. Both fruits contribute their own characteristic flavors and aromas to the rujak dressing.

Rumbia and kawista are combined with other ingredients, including red chilies, shrimp paste, and palm sugar. The mixture produces a bold dressing with layers of spicy, savory, sweet, and sour flavors.

Unlike some varieties of rujak in Java, which generally use a more liquid dressing, rujak Aceh is known for its thicker and more concentrated mixture. This texture allows the dressing to coat the fruit pieces more evenly.

Rujak Aceh is also connected to the social life of local communities. The dish can be served on various occasions, including family gatherings. Its seasoning can also vary from one family or vendor to another, depending on personal preferences and the proportions of ingredients used.

The use of local ingredients and a rich blend of spices makes rujak Aceh part of Indonesia's diverse culinary heritage. The dish demonstrates how locally sourced ingredients can be transformed into a traditional food with a distinctive character and flavor.
