RRI.CO.ID, Jakarta - For those who enjoy gorengan or fried snacks, there is a traditional Semarang snack worth trying: rolade tahu daun singkong. As the name suggests, the dish is made mainly from cassava leaves and tofu.

Rolade tahu daun singkong is made by mixing mashed tofu and cassava leaves with various spices. The mixture is then rolled, cut into pieces, dipped in flour batter, and fried until cooked.

Although it does not contain meat, the rolade has a savory flavor, with a soft texture on the inside and a crispy outer layer. It is commonly enjoyed as a snack or fried treat.

Rolade tahu daun singkong also goes well with bird’s eye chilies or chili sauce. The combination of its savory flavor and spicy kick makes it a simple yet tasty choice for a fried snack.

Susan, a rolade maker and seller in Semarang, said the dish has a story similar to Sosis Solo. Both are said to have developed as alternatives to meat-based dishes, using more affordable ingredients.

“For rolade daun singkong, meat was very expensive, while cassava leaves were abundant, so they were used as a substitute for meat and eggs,” Susan said in a written online interview on Thursday, September 17, 2026.

During preparation, the sliced rolade is dipped in flour batter before being fried. This method serves as an alternative to using eggs as a coating.

Now, rolade tahu daun singkong remains one of the fried snacks found in Semarang. Made with simple ingredients and a savory flavor, it shows how readily available ingredients can be turned into a local specialty.
