RRI.CO.ID, Jakarta - Sushi has become one of Japan's most popular culinary creations, gaining widespread popularity around the world, including in Indonesia. Made with vinegared rice, fish, seafood, vegetables, and seaweed, sushi is now widely available, from Japanese restaurants to food outlets in shopping malls. Besides its distinctive flavor, sushi is often considered a healthier alternative to many fast-food options.
According to Halodoc, sushi's nutritional value comes from the combination of fresh ingredients used in its preparation. Fish such as salmon and tuna are excellent sources of high-quality protein and omega-3 fatty acids, which support heart health, brain function, and help reduce inflammation. Meanwhile, nori, the seaweed commonly used to wrap sushi, contains iodine and essential vitamins that contribute to healthy metabolism and protect the body's cells from oxidative damage.
Not only the main ingredients, but also the accompanying condiments offer health benefits. Wasabi contains natural compounds with antimicrobial properties, while pickled ginger (gari) helps cleanse the palate between different types of sushi. Ginger is also known to aid digestion and relieve mild nausea, making it a valuable complement to the dish.
Despite its nutritional benefits, sushi should still be consumed in moderation. Raw fish that is not properly handled or stored may be contaminated with harmful bacteria or parasites, increasing the risk of foodborne illnesses that can cause nausea, vomiting, diarrhea, and stomach pain. In addition, certain large fish species, including some types of tuna, swordfish, and king mackerel, contain higher levels of mercury and should not be eaten excessively over a long period.
Another concern is the high sodium content of soy sauce, which is commonly served with sushi. Excessive sodium intake may contribute to high blood pressure and increase the risk of cardiovascular disease. Sushi rice, which is seasoned with sugar and vinegar, may also raise blood sugar levels when consumed in large portions, particularly for people with diabetes.
To enjoy sushi more safely, choose restaurants that maintain high standards of hygiene and food safety. Consumers are also encouraged to select seafood with lower mercury levels, such as salmon or shrimp, and to use soy sauce sparingly to reduce sodium intake. Eating sushi in balanced portions is the best way to enjoy its nutritional benefits while minimizing potential health risks.
Nevertheless, there is no need to avoid sushi altogether. Environmental Health Perspectives reports that the health benefits of omega-3 fatty acids from fish generally outweigh the risks of mercury exposure, provided consumers choose the right types of fish and eat them in moderation. With proper ingredient selection and balanced consumption, sushi can remain a healthy part of a well-rounded diet.
