Legendary Tambakboyo Grated Coconut Serabi Makes a Comeback in Batang

RRI.CO.ID, Batang - The culinary heritage landscape of Central Java has welcomed back a legendary local staple as the traditional grated coconut serabi (traditional Indonesian pancake) of Tambakboyo Village officially resumed operations. After a prolonged hiatus that left local food enthusiasts yearning for its signature taste, this iconic delicacy is once again available to the public and traditional culinary lovers.

Nestled in Tambakboyo Village, Reban Subdistrict, Batang Regency, Central Java, the business is now driven by a new generation, spearheaded by two young entrepreneurs who are determined to revive their family's ancestral recipes. Despite the modern transition, the owners have made a conscious decision to preserve the authentic, time-honored cooking methods that defined the dish decades ago.

The serabi continues to be slow-cooked using traditional clay pans over wood-fired earthen stoves, a meticulous process that infuses the pancakes with a distinct, smoky aroma.

The Tambakboyo-style serabi has long enjoyed a stellar reputation across Batang, Pekalongan, and neighboring regions. Unlike typical variations of the snack, this particular version is celebrated for its noticeably larger size, thick and fluffy texture, and a perfectly balanced savory-sweet flavor profile.

The intricate process begins with an authentic batter base crafted from a mixture of rice flour, rich coconut milk, water, a pinch of salt, and freshly squeezed pandan leaf juice, which lends a comforting, aromatic fragrance to the pancake. Once slowly baked to perfection on the wood-fired clay pans, the serabi is served warm on top of a traditional banana leaf. It is then generously drizzled with liquid palm sugar (gula aren) and finished with a dense topping of freshly grated coconut.

"It's been a while since I've been selling grated coconut serabi. But starting last month, they reopened, only in the mornings, from 6.00 to 8.00 a.m. local time. You can pick up your order anytime," explained Bowo, one of the young vendors on Tuesday, June 2, 2026, as quoted by Infopublik.id.

The revival of the business represents a delicate balancing act for the young owners. Bowo noted that the serabi stall was originally managed by his parents and had achieved widespread regional acclaim, even receiving an official visit from the former Regent of Batang back in 2020.

To accommodate high demand, Bowo announced that starting Tuesday, the stall would expand its operating hours to include an afternoon session from 2.00 p.m. to 4.00 p.m. local time, supplementing their standard morning slot. However, he acknowledged that overall operational hours remain somewhat restricted due to his primary employment commitments, which he maintains to fulfill daily livelihood needs.

Currently, a hearty portion of the legendary serabi, consisting of four large pieces, is priced affordably at IDR 10,000 (USD 0.56). The return of this culinary treasure is expected to not only satisfy the deep nostalgia of older residents but also safeguard the region's edible history against the tide of modern fast food.

"Besides being a favorite dish among local residents, the existence of Tambakboyo grated coconut serabi is also part of an effort to preserve traditional culinary heritage so that it remains known to the younger generation," Bowo concluded, highlighting his broader mission of cultural stewardship. ***
