Some people call it a pancake, while others refer to it as soft crepes. This is because the dish only requires four main ingredients commonly used for pancakes or soft crepes: milk, flour, eggs, and leftover overripe bananas that are often already available at home.

The process is simple and easy to follow. First, mash the bananas using a fork in a bowl or plate. However, do not mash them too smoothly, as leaving a bit of texture will make the pancake more enjoyable to eat and give it a richer banana flavor.

Next, add all the main ingredients into the mashed bananas and mix well until the batter becomes thick and smooth. The measurements can be adjusted depending on how many bananas are used. To add sweetness, sugar, honey, or a little vanilla can also be mixed in according to personal taste.

Once the batter is ready, heat a pan with a small amount of butter or margarine to prevent sticking. Pour the batter onto the pan and cook over low heat until the bottom turns golden brown. Flip carefully and cook the other side until evenly done.

These banana pancakes can be enjoyed on their own or paired with various toppings to make them even more delicious. Fresh fruits such as strawberries or banana slices, honey, chocolate spread, nuts, grated cheese, or even vanilla ice cream can add extra flavor and texture.

Besides being easy to make, this recipe is also a great way to reduce food waste at home. Overripe bananas naturally taste sweeter, making them perfect for soft and fluffy pancakes that can be enjoyed as breakfast or an afternoon snack with family.
