UGM Students Win Gold Medal for Dairy Byproduct Sausage Innovation

RRI.CO.ID, Yogyakarta - A team of researchers from Universitas Gadjah Mada (UGM) won first place and a gold medal in the food subtheme at the 3rd International Student Summit (ISS) in Kuala Lumpur, Malaysia, which took place from September 12 to 13, 2026.
The students earned top honors for their project titled SOSAFE: Integrating Acid Whey, an eco-friendly food processing concept that upcycles dairy industry byproducts into clean-label sausage ingredients. The interdisciplinary team comprised Prima Cendekia Nirmala Afiatri and Bangkit Setiyoko from the Faculty of Animal Science, along with Nattaya Ashri Syahrayad from the Faculty of Agricultural Technology, under the mentorship of Galuh Adi Insani.
The SOSAFE innovation uses acid whey fermented with Lactiplantibacillus plantarum S21 as a natural biopreservative. This formulation provides a sustainable alternative to synthetic preservatives like nitrites commonly used in processed meats.
To complement the food science aspect, the team integrated a machine learning application and QR code system to ensure ingredient traceability, product information access, and quality monitoring.
"SOSAFE demonstrates that dairy byproducts can be transformed into high-value products through cross-disciplinary collaboration spanning animal science, food technology, and digital innovation. We hope this achievement inspires students to continue developing practical innovations that benefit society," said Galuh on Wednesday, September 16, as quoted on UGM's official website.
Team leader Prima Cendikia reflected on the international recognition as a valuable learning milestone that tested the group's research design, presentation skills, and collaborative strategy.
"Besides sharpening our ability to structure and present ideas, the competition taught us the value of teamwork, communication, and the courage to bring innovative concepts to a global stage," Prima said. ***
