RRI.CO.ID, Jakarta - Kluwek (Pangium edule) is a unique Indonesian fermented seed traditionally used in dishes such as rawon and other regional cuisines. Behind its distinctive black color and flavor, kluwek contains various compounds that have attracted attention in food science, particularly related to fermentation, preservation, and traditional processing methods.
A study published in the journal Food Chemistry reported that Pangium edule seeds contain phenolic compounds, fatty acids, and bioactive substances that contribute to their chemical characteristics. Researchers have investigated these compounds to understand the nutritional and functional properties of kluwek.
One of the most critical aspects of kluwek is its traditional detoxification process. Fresh seeds naturally contain cyanogenic compounds, which can release toxic cyanide if improperly processed. Traditional soaking and fermentation methods are essential to reduce these compounds before consumption.
Beyond safety aspects, fermentation changes the chemical composition of kluwek and develops unique flavors and aromas. This traditional knowledge represents an important example of how indigenous food processing can improve the safety and usability of plant resources.
Researchers have also explored kluwek extracts for antimicrobial properties. Certain compounds within fermented seeds have demonstrated biological activity in laboratory studies, opening avenues for further research.
Although kluwek is an important traditional culinary staple, proper processing remains essential. Raw or improperly prepared seeds should not be consumed due to potential toxicity from naturally occurring cyanogenic compounds.
