Cassava: Indonesia’s Energy Source & Resistant Starch

RRI.CO.ID, Jakarta - Cassava (Manihot esculenta) is one of Indonesia’s most important agricultural crops, serving as a major source of carbohydrates and key pillar of food security. Beyond its role as an energy source, cassava contains starch, dietary fiber, and bioactive compounds that have encouraged research into functional food applications.
A review published in the journal Food Hydrocolloids reported that cassava starch possesses unique functional properties, making it valuable for food processing and industrial applications. Researchers have studied cassava-based ingredients for their texture, stability, and potential nutritional modifications.
One of the major advantages of cassava is its ability to provide affordable dietary energy. As a carbohydrate-rich crop, cassava plays a vital role in food diversification, especially in regions where alternative staple foods are needed.
Cassava has also gained attention through research on resistant starch. Modified cassava products containing higher resistant starch levels are being explored because this type of carbohydrate is digested more slowly and may contribute to better gut health.
Beyond food applications, cassava starch is widely used in pharmaceutical and cosmetic industries. Its natural thickening properties make it valuable in formulations such as powders, creams, as well as in the production of biodegradable materials.
Although cassava is nutritious when properly processed, raw cassava contains cyanogenic compounds that can release toxic cyanide. Proper preparation methods such as peeling, soaking, and cooking are essential to ensure safety.
