Balinese Sate Lilit: A Rich Culinary Tradition

RRI.CO.ID, Jakarta - Sate lilit is one of Bali’s traditional dishes and remains an important part of the island’s culinary identity. Unlike conventional satay made from chunks of meat skewered on sticks, sate lilit is prepared by finely mincing the meat, mixing it with Balinese spices, and wrapping the mixture around flat bamboo sticks or lemongrass stalks before grilling it over charcoal.
The name sate lilit comes from the preparation method, in which the meat mixture is wrapped around a skewer or stalk. The dish is not only known as a traditional food but is also closely connected to the traditions and religious life of Bali’s Hindu community.
According to a culinary and cultural review published in the December 2016 edition of Sedap magazine, sate lilit was historically used as part of offerings in various traditional and religious ceremonies. It was commonly served alongside lawar and other meat dishes as an expression of respect for the deities and gratitude among the Balinese people.
The preparation of sate lilit for traditional ceremonies also reflects the value of communal cooperation. In the past, men would work together to prepare the meat, mix the spices, wrap the mixture around bamboo sticks, and grill the satay.
The circular shape of sate lilit wrapped around the bamboo stick also carries a philosophical meaning related to togetherness and unity. This reflects the social life of Balinese communities, which places strong emphasis on mutual cooperation and social bonds.
Sate lilit originally commonly used pork and seafood, reflecting Bali’s cultural traditions and geographical conditions. As tourism developed, its ingredients became more diverse, including chicken and beef, allowing the dish to be enjoyed by people and visitors from different backgrounds.
Today, sate lilit remains one of the traditional dishes sought after by tourists visiting Bali. The combination of spices such as turmeric, galangal, shallots, garlic, and grated coconut, along with the traditional grilling process, creates its distinctive flavor and makes sate lilit a culinary heritage representing the history, traditions, and communal spirit of Balinese society.
