Sop Konro: Makassar's Legendary Beef Rib Soup

RRI.CO.ID, Makassar – Sop Konro is a signature Bugis-Makassar dish known for tender beef ribs simmered in a rich, dark broth. Originating from South Sulawesi, the legendary soup has become popular beyond Makassar and across Indonesia.

The dish uses beef ribs or beef meat as its main ingredient, with the ribs giving Sop Konro its distinctive character. Its brownish-black broth may resemble rawon at first glance, but the two dishes have different flavors and textures.

The name “Konro” refers to rib bones, which traditionally form the centerpiece of the dish. The ribs are slowly simmered in a heavily seasoned broth until the meat becomes tender, juicy, and deeply infused with spices.

One of Sop Konro’s defining ingredients is kluwak, which gives the broth its dark color and distinctive aroma. The ingredient also contributes to the soup’s rich character, setting it apart from other Indonesian beef soups.

The broth is prepared with a generous blend of spices that creates a complex savory flavor. Coriander, cumin, lemongrass, galangal, cinnamon, and cloves combine to produce warm, fragrant, and slightly sharp notes.

The beef ribs are cooked slowly along with the spices to develop their flavor and tenderness. This cooking process allows the seasoning to penetrate the meat and produce the hearty taste associated with traditional Sop Konro.

A modern variation known as Konro Bakar offers another way to enjoy the dish. The seasoned ribs are grilled over charcoal after boiling, while the broth is served separately with a savory-sweet peanut sauce.

Both Sop Konro and Konro Bakar are commonly enjoyed warm, either straight from the pot or fresh from the grill. The traditional soup is typically served with ketupat, burasa, or plain white rice.

A squeeze of lime and bird’s eye chili sambal can be added to balance the rich and savory flavors. Together, the tender ribs, dark spiced broth, and traditional accompaniments make Sop Konro an important part of South Sulawesi’s culinary heritage.
